Few, indeed, are those who fail to realize that "bread is the staff of life," and no matter how much labor and care is expended by the busy housewife, unless she has a good grade of flour to work with, her efforts will result in failure, and one may ask for bread, and a stone, so to speak, will be received. In fact, the Alpha and Omega of the matter is that the miller must thoroughly understand his business and have the proper machinery with which to do his work, or a grade of flour will be sent out of which it will be impossible to make wholesome bread. The business of flour milling has come to be regarded as one of the most important of callings, and the amount of capital invested in this line of business is very large, and many skilled hands are employed to furnish the chief food product to the various households of the country. As a successful follower of the grist milling business, F. PAUSTIAN stands at the head in Dodge County, Wis., and from his finely equipped roller mills at Mayville, a fine grade of flour is sent out. Not alone does he confine his attention to this business, for he is also the proprietor of the electric light works of the town, and in various other ways he has shown that he is enterprising and substantial. He has been a resident of Mayville since 1857, but was born in Prussia, March 27, 1832, and in his native land grew to manhood and obtained a good practical education in his own language, but in English is self-educated. He learned his trade in early life and followed that business for a number of years in the old country. In 1857, with the view of securing a fortune, he embarked at Hamburg for the city of New York, in which city he arrived in the fall of that year, and he almost immediately came to Wisconsin and to Dodge County, locating at Hustiford. He worked in the flouring mill at this place for eight years, and in February 1865, came to Mayville and purchased the mill here, which was at that time an ordinary water mill, with four runs of stone. He at once began devoting his attention to building up a fine trade, by sending out a superior grade of flour, and so successful was he in this respect that in 1880 he decided to add the roller process to his mill, and it is now equipped with twelve sets of rollers, which makes it one of the most complete mills of Dodge County, its capacity being 125 barrels per day. In March 1894, Mr. PAUSTIAN contracted for the electric light plant of Mayville, and in the month of June the works were completed, according to Edison's best incandescent light system - one of the most perfect in use, and the citizens of the town are delighted with the improved lighting of the streets, residences and business buildings. Mr. PAUSTIAN deserves many words of praise for the energetic manner in which he pushed this enterprise to a successful conclusion, as well as for the substantial aid he has given other enterprises of the town, and he has his reward in the respect which is accorded him by his fellow townsmen. He is also the owner of an oatmeal mill and a saw mill, the former of which he erected in 1888, it being a very complete mill of its kind, and which is doing a good business. Mr. PAUSTIAN commenced the battle of life for himself in Dodge County with very little means, and has by his own good judgment, energy and push, built up a very extensive and paying business. His thirty-seven long years of business life in this section have been characterized by the most undeviating honesty and the respect that is accorded him by all classes is justly merited. He was married in Hustiford, in 1860, to Miss Sophia ROLL, who was born, reared and educated in Germany, and to their union the following children have been given: Albert P., who is his father's assistant in the milling business, is a young man of excellent habits, and gives every promise of a useful citizenship; Anna was educated in Mayville and Milwaukee; Martha; Clara is a successful teacher of Dodge County, and was educated at Oshkosh; and Paula, who is now attending the schools of Mayville. Politically Mr. PAUSTIAN is a Republican, and his first presidential vote was cast for Abraham Lincoln in 1860. Submitted by Carol
